Jefferson City’s food code requires food-service establishments to be inspected at least once every six months.

Priority violations are items, if in non-compliance, that are more likely to contribute to food contamination, illness or an environmental health hazard. Some examples of priority items include improper holding temperatures of foods, inadequate cooking of food items, poor personal hygiene and contaminated equipment.

Examples of core items include cleaning and maintenance of floors, walls and ceilings; open waste receptacles; unshielded light bulbs in food-preparation areas; and missing thermometers in refrigeration units for monitoring temperature.

The food code typically requires establishments to correct priority violations at the time of inspection when possible, or within a longer time frame not to exceed 10 days agreed upon with the regulatory authority. Establishments are required to correct core violations by a date agreed to with the regulatory authority not to exceed 90 days from the time of inspection.

Trinity Lutheran Elementary School, 803 Swifts Highway, three priority violations: sanitizer water too strong (corrected on site); several dented cans in storage area (corrected on site); reach-in cooler not at proper temperature.

Dollar General Store No. 1219, 1414 Missouri Blvd., one core violation: no hand-washing sign present in restroom (corrected on site).

Kate and Ally’s Pizzaria, 1418 Missouri Blvd., two core violations: wall/floor/shelf in food prep area has food residue present; dust accumulation on exhaust filters.

Longhorn Steakhouse of JC No. 5219, 3545 Missouri Blvd., two priority violations: cold holding unit not at proper temperature; date labels missing from some items in a cold holding unit — and two core violations: air vent had debris present; gasket torn on a cold holding unit.

Mi Tolteca Mexican Restaurant, 1850 Route C, Suite E, three core violations: dirty pass-through wall in servers’ station, exterior of ice maker and ceiling in kitchen; paper towel dispensers lack paper towels at bar, kitchen and servers’ station; unused, broken equipment in dumpster enclosure and around back of store.

Papa John’s Pizza USA Inc., 2103 Missouri Blvd., two core violations: cooler door not closing properly; debris in hood vents.

Red Lobster No. 733, 3519 Country Club Drive, three priority violations: time stamps not present on items in holding area (corrected on site); utensils had debris present (corrected on site); item in a cold holding table not at proper temperature (corrected on site) — and five core violations: lights in areas of kitchen missing shields; floors in walk-in cooler had debris present; equipment lid cracked; plates under a cooking fixture; torn gasket on a reach-in cooler.

Steak ‘N Shake, 2519 Missouri Blvd., four core violations: walls and floors in store missing coved base tiles and walls are bulging with water damage; floors soiled with residue near walls and under equipment; servers’ salad station iced over; non-food contact surfaces soiled: soda fountain, interior of fryers cabinet, back steam table wall, can opener, under side of shelving above steam table.

Subway Capital Mall No. 15307, 3600 Country Club Drive, Suite 216, one priority violation: knife currently in use had debris present (corrected on site) — and one core violation: food items stored on floor in restroom (corrected on site).

Subway Supercenter, 401 Supercenter Drive, one priority violation: reach-in cooler not at proper temperature; food items in walk-in cooler stored on floor.

Taco Bell No. 382, 2605 Missouri Blvd., one core violation: debris in bottom of reach-in freezer (corrected on site).

The Mission LLC, 915 E. High St., two core violations: refrigeration equipment not maintaining temperature: Criterion dorm cooler icing up and Leer ice freezer just below 30 degrees F; damaged wall in women’s restroom.

Schnucks — Seafood, 1801 Missouri Blvd., two core violations: base coving in disrepair in work room; debris on floor behind steamer (corrected on site).

Walmart Supercenter No. 5477 — Bakery, 401 Supercenter Drive, two core violations: single-service articles stored improperly (cake decorations very near first aid supplies); several light shields have breaks present and several ceiling tiles have water damage.

Walmart Supercenter No. 5477 — Produce, 401 Supercenter Drive, two core violations: non-food contact surfaces not maintained: evaporator pan and drain stopped up in cooler; unshielded light fixture over triple sink.

Walmart Supercenter No. 5477 — Deli, 401 Supercenter Drive, one core violation: non-food contact surfaces soiled: hood, filters, packaging station wall.

Clarke Senior Center, 1310 Linden Drive, one priority violation: sanitizer tested too low (corrected on site) — and one core violation: floor has broken tiles near ice machine, wall has loose coved base strip near hand sink and near ice machine.

ABC Preschool, 1950 Rolling Hills Drive, one priority violation: food item not from an approved source (corrected on site).

Ruby Tuesday, 2300 Missouri Blvd., one priority violation: food product in drawer cooler not at required 41 degrees F or less — and one core violation: areas on wall by commercial dishwasher not clean.

Popeye’s Louisiana Chicken, 2102 Missouri Blvd., four core violations: leak at plumbing fixture; necessary items needed in toilet facilities and employee sanitation area were not present; items in food preparation area had debris present; equipment in disrepair.

Dunkin Donuts and Baskin Robbins, 2207 Missouri Blvd., one priority violation: sanitizer tank empty at triple sink and wiping cloths not stored in sanitizer (corrected on site) — and five core violations: blender, blast freezer, dipper wells, can opener and racks soiled; boxed straws, lids, etc., on floor in cake-decorating area; unused blast freezer in work area and torn door gasket on Delfield cooler; need to re-caulk cake-decorating hand-wash sink to wall, floor under ovens and in walk-in cooler soiled, and lighting in walk-in freezer insufficient; garbage and spilled trash around dumpster and enclosure.

The Pizza Company, 1508 E. McCarty St., one priority violation: improper storage of toxic and sanitizers with flour, bowls, condiments, etc., in multiple locations — and two core violations: wall dirty under dish station air handler and floor dirty in ice machine room; non-food contact surfaces soiled: shelves in one-door Coke cooler, shelves in pre-made rack and ice maker interior top.

Kentucky Fried Chicken, 1209 Missouri Blvd., seven core violations: filter had debris present; debris present at self-service area; debris present in cooling unit; gaskets on cooling unit in disrepair; fan covers had debris present; debris on floors in kitchen area; reach-in freezer had debris present.
